The master of the smokestack rack is back for the annual Rib Fest in Lake Lenore on March 2. Tom Ripley of Lake Lenore Meats, along with his family, a cohort of savvy smokers and the Lake Lenore Knights of Columbus are back tending the fires for another delicious farewell to winter event. It takes place at the Lake Lenore Community Centre. The event is a fundraiser for Knights of Columbus projects.  

"Tom and his crew are cooking up the ribs again, and he and his crew are guaranteeing that it’s going to be fantastic this year,” says Allan Hartl with the Knights of Columbus. “He has also said that everything this year is gluten free except for the buns.” That’s good new for those with dietary restrictions.  

Tom always has a new recipe or rub for his creations, but you’ll have to buy in to find out what flavour delights he has in store for this year. Last year’s was a vibrant whiskey barbecue sauce and a flavour explosion with teriyaki ribs. This year, Tom will have to get even more creative to beat last year’s offerings.  

“It’s a secret,” laughs Hartl.  

The evening package comes complete with a DJ, a silent auction, a 50/50 draw, and some surprises, says Hartl. Happy hour starts at 5:30, supper at 6:30 with the dance to follow.  

Rib Fest is always a great night of fun and festivities with friends from throughout the region. Best of all, a new fall-off-the-bone taste adventure awaits.
